When using tofu instead of eggs in a pudding, using silken or regular firm tofu is key - this will allow your pudding or mousse to firm up, after it is thoroughly chilled. Family Mealtime

When I was a young girl one of my favorite first memories was standing on a stool in Grandma Cook’s (yep, that was her real name) kitchen as she prepared applesauce from the apples in her backyard. Kale, Fig and Tomato Salad!

There are so many ways to prepare and serve fresh kale, but no matter how you serve it, kale has to be cleaned first. Cleaning dark leafy greens (kale, spinach, romaine, collards, etc.) is essential in order to rid leaves of the sandy residue often found on their surfaces. Removing residues before cooking is very important, otherwise your greens recipes may have a “gritty” taste. I have included a delicious recipe and my no-fail way to prep kale!

Jazzy, Snazzy Quinoa

Quinoa (pronounced keen-wa) is a fabulous alternative to brown rice. Quinoa is technically the seed of an herbaceous flowering plant, not a cereal grass (grain), but its texture, flavor, and uses echo those of many true grains, so it’s generally thought of as a grain.

Here’s an easy way to incorporate a bit of spice into a quick to prepare, tasty casserole!

Molasses Two-Bean Bake  (Low fat Cooking) 

Makes 3 to 4 servings

1 can (15 ounces) black beans, rinsed and drained

1 can (15 ounces) garbanzo beans, rinsed and drained

2 medium sweet onions, chopped

1/4 teaspoon garlic powder

1/2 teaspoon chili powder

1/8 teaspoon cayenne (more or less, to taste)

1 heaping tablespoon blackstrap molasses

1/4 cup organic catsup

 1/4 teaspoon salt

Preheat oven to 375 degrees F. Place all of the ingredients into a large mixing bowl. Toss to combine. Pour into a medium casserole. Cover and bake for 45 minutes to 1 hour.

Serve with crusty bread, quinoa or brown rice on the side. A crisp green salad or steamed green vegetables such as broccoli or asparagus makes a nice side dish for this casserole too!

A 'S Wonderful Show with the Great Michael Feinstein!

Today I welcomed the great Michael Feinstein and he was a marvelous guest! Actually, (as Ira Gershwin might have said) the entire show was  "S Wonderful!" This show is brimming with great recipes, great music and great green tips for the new year! Mr. Feinstein talked about his upcoming New Years Eve concert at his popular namesake nightclub in the Big Apple.  I shared my full "New Years Eve Gala," four-course menu. My recipe of the week is "Savory Sweet Potato Soup," which is a delightful soup to serve as a first course or as main dish fare all winder long! Vegan Dessert Recipes for the Holidays!

HappyHealthy Holidays! Hurray hurray! WE ALL LOVE delicious desserts and on today's show we featured lots of tips for making tasty vegn treats at home this holiday season. This fun show featured "dairy-free ice cream author extraordinaire,"  Cathe Olsen, who penned; Lick It! (creamy, dreamy, ice creams your mouth will love.) Cathe shared her love of homemade vegan ice cream and why it is so quick and easy to make! Dr. Barnard and his "21 Day Vegan Kickstart"

 Dr. Neal Barnard, one of the country's leading health advocates, was my guest on Jazzy Vegetarian Radio today. Dr. Barnard discussed Cancer vs. Diet, and how adopting a vegan diet may help in the prevention of cancer, or help in cancer survival. He shared information about the Physicians Committee for Responsible Medicine (PCRM) which he founded in 1985. He talked about his book "The Cancer Survivor's Guide." He discussed "New Four Food Groups" (Fruits, Vegetables, Beans (Legumes), and Whole Grains." He shared several of his wonderful basic recipe solutions for eating a delcious, low fat, vegan diet, every day. We chatted about the "21 Day Vegan Kickstart" a three-week plan that he masterminded.
