Today I welcomed Dr. Pam Popper, Ph.D., N.D. to Jazzy Vegetarian Radio. Dr. Popper is a naturopath, nutritionist and the Executive Director of The Wellness Forum. We discussed the overall goals of the Wellness Forum and heard about her recent trip to South Africa with the great Dr. T. Colin Campbell, lecturing about plant-based nutrition and other health related topics. Dr. Popper shared insightful facts about the “basics of fat” in the diet, focusing on the importance and benefits of eliminating oils from our diets. We talked about several topics that are highlighted in her new book: “Solving Americas Healthcare Crisis.” We heard from Dr. Popper about how to get the proper essential fatty acids, even when you are following a plant-based diet. She shared several great tips for people (such as athletes) on how to actually gain weight and get plenty of extra calories and nutrition while following a vegan diet. Dr. Popper also demystified the controversy behind the often-shunned white potato, which is regaining popularity these days due to its impressive profile. She suggested tasty low fat toppings for your spuds, such as salsa (yum), or minestrone soup (yay). I talked about my favorite “spud topper,” which is Easy Listening Chili! (delish). We heard about Dr. Popper’s upcoming appearance in the full-length feature film, Forks Over Knives, which is about diet and health. It will be in theaters nationwide in May 2011.
