I like to make squash with fresh corn bell peppers crushed tomatoes onion white and green and a jalapeño.salt and pepper to taste. Side of whole wheat tortillas. Yummy! !

Throw a small summer squash in the blender then add it to the recipe for vegan non buttermilk soup that jazzy vegetarian created. Healthy, tasty and quick. And raw,which makes it a delight for hot summer days!c

Butternut squash peeled and sliced 1/2/' thick slightly overlap layers in a buttered glass lasagna dish. spread over all slices a topping of 3 cloves crushed garlic in 3/4 stick melted butter, 1/4C.grated parmesan cheese, and 1/2 C. Italian style breadcrumbs,baked in 375o pre-heated oven until sqaush is soft, about 35 min. test with a fork for done. It tastes like garlic bread on squash.

I love to saute Zucchini, onions etc in coconut oil. A new favorite is potatoes and zucchini thinly sliced and brushed with olive oil, baked for 15 min. and then put in a casserole with diced tomatoes, maybe some chili's - anything else.. Bake 20 min at 350. yum

patties! finely shred a mix of squash, press to remove some of the moisture, mix with italian breadcrumbs and shredded cheese (egg optional), shape into patties and saute until toasty brown on both sides. serve with marinara

I like to make a zucchini saute`. I slice the zucchini into 1/4 " discs . Put some olive oil in a pan & heat to medium . Single layer the zucchini & saute` about 3 min. on each side .Add 2 diced , fresh Roma tomatoes & continue sauteing for 3-4 more minutes .Add 2 oz. soy cheese on top & cover the pan with a lid . Continue 2-3 minutes until cheese melts . Serve immediately . Enjoy . :)

Courgettes Farcies! Or stuffed zucchini! I can never get enough of this vegetable. Hollow out with a spoon and stuff with: A mixture of sauteed onions/garlic in plenty of olive oil. To that, add Italian seasonings, S & P, and breadcrumbs. Toss in a 1/4 cup pine nuts. Mix well and stuff the zucchini. Add chopped tomatoes on top, or vegan cheese crumbles & bake. They're "tres bon"!

With zucchini, I slice long thin strips and set aside. I sauté sliced or diced onions in vegan butter. I ad the zucchini and cook over low flame tip somewhat transparent. I ad dill, some salt and pepper to taste. Turn off stove and ad vegan sour cream to taste. MMMMMMM!

I love to roast them. I toss them with 2 tsp of extra virgin olive oil. I arrange them on a baking sheet. I then sprinkle them with garlic powder, onion powder, salt, and pepper. I put them in a 400°oven and roast for 20 to 30 minutes. Yummy delicious!!

2words. veggie lasagna. quick white garlic sauce: 2tbl raw cashew,1tbl wheat flour or GF, 1/2tsp each garlic pwdr mustard pwd onion flake, 1tbl nutrition yeast, 1/2c coconut milk. S&P to taste.blend it all up. add some heat like chili flake or fresh chopped herbs and a little sweet like pinch of sugar or agave. the sauce is thick (thicker the better), but after it bakes with veggies its a lot thinner

Ratatouille!!! I love summer veggies like zucchini, yellow squash, eggplant, two colors of peppers, onions,garlic,etc. in this French stew. I make it 2 ways: in one pot, or like a layered casserole, or "tian" in French. Nothing says summer like comforting Ratatouille!

Zucchini Crisp is a marvelous way to use up those giant zucchini. People will not believe that it is NOT fresh apple crisp.The recipe is not like your typical apple crisp and a few steps are necessary for making it delectable and yummy that are not traditional. My friends and family love and ask me what kind of apples did I use. I smile and say I can't remember.

Well my favorite way is to juice it, but if I sautee it I slice it thin and sautee with coconut oil, african curry spice, cinnamon, instant coffee, garlic, agave, ground pepper, pink Himalayan salt, a dash of Braggs aminos, onions, and your favorite other hearty vegetables, tomatoes, add healthy rice or other non-gluten grain.

From the looks of your responses, you are pretty popular! And so is summer squash - I work for a food bank so others donate veggies for our clients. We try to teach them how to use all of the summer veggies - raw in salads, juiced, blended, sauteed, steamed, in a casserole - all with the purpose of getting out the word to eat more healthy and to be a role model for their children so they learn to eat it and cook it when they become adults. And shows like yours also advocate this.

I like to slice my squash, and mix some zucchini in there too. I chop up a little sweet onion, finely. I heat up my skillet with coconut oil and sautée all above! Sometimes, that is just my meal for lunch, it's so good!! :)

i like summer squash as a dessert - i shred up the raw squash and top with a warm turbinado/lemon/cinnamon sauce. (to make sauce use: 1 cup turbinado sugar 1 cup of water juice of half of a lemon teaspoon of cinnamon Combine all ingredients in a small saucepan over low/medium heat, stir until sugar has dissolved. Remove from heat, let cool and drizzle over squash)

My favorite way too prepare summer(yellow) squash is to stir fry it in vegetable oil with some chilli powder, oregano, and a pinch o salt. It's a great Mexican style side dish for vegetarian tacos or enchiladas.I also like too add zucchini, broccoli, onions, or some colorful bell peppers. Leftovers make a tasty quesadilla aswell!

I toss chopped raw zucchini in a bowl of cooked Israeli Couscous. I'll add chopped green onions, carrots or other veggies and coat it with a simple lemony vinegrette dressing. Simple summer fun.

Hi Laura. I like to cut up yellow summer squash and zucchini into thumb-sized pieces, toss them with extra virgin olive oil with a sprinkling of Italian herbs (rosemary, basil, oregano) the convect roast them in the oven (325 degrees) for about 15 minutes, toss them and bake for another 15 minutes until they are golden brown around the edges - concentrated flavors!

Included in a "veggie pack (foil)' for the grill, with some onion, tomato, peppers. evoo, salt, pepper, oregano, basil. Cook on grill in foil pack for 1 hour. Great to make individual servings for a group!

Since I don't eat onions, summer squash is a great replacement for filling the space and texture of onions in most recipes. Just sauté the same as onions, less cooking time. Or brown over a high heat if that's what's needed.

Wash them, slice and layer in a microwave dish, sprinkle a pinch of salt over them, drizzle with 2 Tbs. popcorn oil, cover and cook on hi for 3 minutes, or until cooked.

My favorite way is to slice them put them in foil with fresh rosemary, basil, oregano, diced onions and vegan butter. Put on grill for about 20 minutes. Remove and open carefully.

Cut into planks or skewer chunks and grill. While cooking, brush with a mixture of equal parts soy sauce and water with minced garlic, sugar, black pepper and sesame oil. wonderful with basmati or brown rice!

I cook a whole butternut squash in a crock pot. just add a little water...Then.slice in half...remove seeds..and pour on the maple syrup...VOILA! simple.

I saute 1/4 inch lengthwise cut summer squash and zucchini slices with some sliced onions, olive oil, salt and pepper. I place the veggies on a ciabatta roll that I have applied a vegan mayo/pesto mixture to and place in the paninni press for a couple of minutes until the bread is warmed through. So yummy!

This cold soup recipe is a bit decadent and absolutely delish. 4 medium zucchini or other summer squash, sliced 3 ¾ cups vegetable broth 4 small to medium green onions, including green ends, chopped 1 cup vegan sour cream 16 oz vegan cream cheese 1 tsp salt 1 tsp pepper fresh dill to taste paprika to taste Cook zucchini and green onion in broth until soft, 5-7 minutes. Blend cream cheese and sour cream by halves in a processor. Add zucchini and mix a portion at a time until smooth. Chill overnight. Soup is best served very cold.

I LOVE making zucchini latkes, particularly with the zucchini that are overgrown and huge. I grate them and add whatever veggies I have leftover in my fridge and need to use. Just remember to scoop out the giant seeds in the center before grating them. You can add whatever spices and/or herbs to them before frying them, making them curried, Japanese, Chinese, Italian...whatever you choose! You can toast the seeds and gobble them up as well. Enjoy!

Nothing beats grilled summer squash! I usually brush slices with extra virgin olive oil and then sprinkle with Italian herbs. If there's any leftover they go into a salad or in roasted veggie pasta.

I love to stuff zucchini with a herb bread stuffing then top with fresh tomato marinara. My very favorite is zucchini bread of course!!

I love your show, the recipes that you prepare are out of this world. But the way I like summer squash is to fry them in a pan like I'm frying potatoes with onions, sweet potatoes, color peppers, rosemary, sea salt, cracked pepper and olive oil.

One of my favorite ways to cook summer squash is to slice no more than 1/4 inch thick, coat with a little Saffola and coat with seasoned bread crumbs and a favorite vegetarian seasoning and granulated garlic, then fry in Saffola oil turning when becoming brown.

I fix lots of squash but really enjoy stuffing big zucchini with mushrooms, onions, garlic, tofu and seasonings. Baking with a small amount of vegan cheese and tomato sauce makes it look and taste wonderful.

I make a summer saute' with chunky summer squash, walla walla onion, garden tomato, salt and pepper with a sauce of homemade salsa and two T of organic ketchup. Garnish with chiffonade of fresh basil. This is also good as a pasta sauce and is better the next day!

I love the zucchini and jalepeno soup from Wegmans site.it is so creamy! 2 Tbsp olive oil 1 onion, minced 1 jalapeno pepper, seeded (reserve seeds), minced 3 cups Better than Boullian vegetable stock 3 medium zucchini (partially peeled if desired) quartered, cut in 1-inch chunks.Saute minced onion in olive oil on MED-LOW 5-7 min, until translucent. Add minced jalapeno peppers and saut until soft. Add zucchini and continue to saut until tender. Add vegetable stock and simmer on an even low boil at MED-HIGH for 10 min. Let cool some and carefully transfer to Vitamix blender. Start on LOW and increase speed to puree. Add jalapeno seeds to your personal heat preference and blend. Season with salt and pepper t Cilantro leaves for garnish. Salt and pepper to taste

My favorite way to prepare summer squash is to slice into sticks, mix with carrot and celery sticks, drenched in vegan ranch dressing. Best enjoyed with a glass of wine!

For me, keeping veggie dishes simple is the most delicious. This recipes serves 4: spiralize 2 large zucchini and put in a lg bowl. Add 1 avocado, 1/2 cuke chopped, juice of 1/2 lemon, 1 garlic clove and 2 tbsp. of almond or coconut milk in a food processor. Process until smooth. Toss zucchini with the sauce until coated. Garnish with cherry tomatoes and basil leaves-ENJOY!

I bake slices of summer squash dusted with dried mint and pepper (425 deg for 15-20 min), and then I put a bit of goat cheese on top. I love this recipe...it's like candy to me! p.s. Love, love your show! :)...and love you're sunny, jazzy cheerfulness too!

Love your show--Have changed my eating habits so much I've lost 97 pounds Since Dec. 2013 and still losing. We have a nuwave oven pro and we cut our summer squash into long planks and just cook it (on the high rack) until it gets a little color--it really brings out the sweetness. I love to make zucchini subs! I sauté the squash with peppers, onions, & garlic. Once tender, I stir in some marinara. I then place the mixture on sub rolls & perhaps top with a little vegan cheese. Jazzylicious!!!

I love to use my mandolin to slice organic summer squash, stir a small amount of salt, let sit for 1 hour, then pad dry with paper towel, toss a small amount of organic olive oil, pepper flakes, coarse ground pepper, a dash of turmeric , and place on baking pan lined in parchment paper with minimal overlapping. place pan in center of oven at 250 degrees for around 55 minutes, drizzle with balsamic vinegar, and juice from half a Key lime, let cool for 5 minutes, and plate up with a small amount of chopped parsley as a wonderful, crispy side dish or healthy snack that is crispy, savory, and salty!

My favorite way to prepare summer squash is in Isa Chandra Moskowitz's Tempeh Giardino recipe! Giardino just means "garden," but it's tempeh, tomatoes, yellow squash, and fresh basil sauteed with olive oil and red pepper flakes. It's easy and amazingly good! I also love to add yellow squash and zucchini to veggie chili with tomatoes and bell peppers to give it extra veggie goodness to complement the beans.
