Raw Food Chat and Jazzy Music!

Today, on Jazzy Vegetarian Radio I spoke with award-winning songwriter, producer and recording artist, Michéal Castaldo about his upcoming concert appearances. We discussed Michéal’s “New York Olive Oil Coop” which features his delicious Organic Olive Oil and Balsamic Vinegar! We heard about Michéal’s lovely villa in Italy and some of the incredible charity work that he does. I played the beautiful track “Lo Credo” from his acclaimed CD, Acteo. I love this CD! Michéal will be appearing at the Hearst Auditorium in Mineola, NY on May 15th, 2011 at 7PM. The show will feature an evening of song and stories, set against the backdrop of majestic vistas of Calabria, Italy, and will feature a professional string orchestra. Check it out!

In addition, I chatted with Peter Daniel, co-author of the recently released book, “Rawlicious: Delicious Raw Recipes for Radiant Health.” The book covers a broad spectrum of recipes and raw principles, from basics like stocking your kitchen, juicing, salad preparation, and making smoothies, to more advanced, gourmet dishes. We discussed Macronutrients vs. Micronutrients and Peter shared tips about his top superfoods too!

Since we featured raw food information today, here is my easy Recipe of the Week. No cooking needed! Many of us love Guacamole, but we do not often think of it as a raw food. Here’s a simple, basic and super quick recipe for this classic raw dip!

Lemony Guacamole

2 medium avocados

2 cloves of garlic, minced

Juice from 1/2 of a fresh lemon (to taste)

Sea salt (to taste)

Fresh ground pepper or cayenne (to taste)

Peel and seed the avocados, and place the flesh in a medium bowl. Add the garlic. Add a bit of fresh squeezed lemon, some sea salt and fresh ground pepper juice (to taste). For a spicier dip, add a dash of ground cayenne pepper. Mash it all together until the dip is smooth. The perfect dip for dipping veggie sticks or organic whole grain tortilla chips. That is Jazzy!
