Laura Theodore's "Vegetarian Cooking for Every Day" offers an introduction to vegetarianism and vegetarian cooking along with dozens of mostly quick, mostly easy, and all healthy and vegan recipes. If you're new to vegetarianism or just looking for some quick and easy recipes to add to your repertoire, this is a great little book.

"Vegetarian Cooking for Every Day" by Laura Theodore is a great little vegetarian cookbook that I made some great recipes from. Luckily Laura’s book not only has new recipes in it, but she also has a Vegetarian Food Glossary that goes into detail about some of the ingredients that are found throughout the book, including vegan milk, tamari sauce, soy cheese and tofu. This glossary section also tells the reader what they should have as “staples” in their pantry, so it’s a helpful guide to buying better foods as well. Obviously, being a vegetarian cookbook, there is a large focus on dishes made with vegetables, but there are also recipes for vegetarian desserts! And while we tried several of the recipes in the book (all of which were good), one of my favorites was the “Nutritious Nachos” made with soy cheese. The ingredient list was simple - organic tortilla chips, tomatoes, green pepper, black olives, cilantro, sea salt, and the soy cheese. It was delicious! Laura Theodore has put together a great little cookbook here for anyone who either is or is thinking about trying out the vegetarian lifestyle.

"Vegetarian Cooking for Every Day" is an aesthetically pleasing book, as you can tell by the cover, by Laura Theodore, the Jazzy Vegetarian. The focus of this vegetarian cookbook is making fruits and vegetables the “star” of your meals. There are so many reasons that women and men should be vegetarian or eat a mostly vegetarian diet...From the environmental impact of cutting meat from your diet to the health benefits, "Vegetarian Cooking for Every Day" makes it easy to go veggie. I love how the recipes in "Vegetarian Cooking for Every Day" are organized: 5 Minute Prep, Quick Prep, Advanced, Vegan, Dairy...As a working mom, both in and outside of the home, I need quick recipes during the work week. We also need to try new vegetarian recipes, as we get in a rut of always eating the same things. One of my favorite recipes in "Vegetarian Cooking for Every Day" is the Quinoa Breakfast Porridge. My kids love hot cereals, and I love quinoa! We always cook quinoa as sort of a quick cooking rice substitute, and I have never thought of using it as a grain in a sweet cereal. Thanks to the Jazzy Vegetarian’s cookbook "Vegetarian Cooking for Every Day," we are broadening our vegetarian diet.

"NEW COOKBOOK from the JAZZY VEGETARIAN"
With the spate of news reports about the ill-effects from eating too much red meat – everything from heart disease to increased cancer risk – it’s no surprise that more people are turning to vegetarian or semi-vegetarian diets.
Laura Theodore has been following a vegetarian diet for over 25 years. Last summer, she was asked to parlay her experience into a cookbook. Theodore’s book, “Vegetarian Cooking for Every Day,” offers more than 60 vegetarian recipes, as well as shopping and ingredients lists.
Theodore feels that more and more people are going vegetarian out of compassion for animals, concern for the environment, and the quest for a healthier lifestyle. Of eating vegan and being “green," she said “Eating vegan can be a challenge in our area at this time of year. During the winter months, I recommend that people take advantage of all the organic produce now available at our local supermarkets. For year 'round local organic pantry items, I shop at our local health food market, Taste of Dawn. The rest of the year, I shop at all of our wonderful local farmers markets including Farms View (on Black Oak Ridge Road) and the Riverdale Farmers Market (every Tuesday, on Hamburg Turnpike.) I also purchase my organic gardening supplies locally at Glenwild Garden Center.”
