Eco-Chic Decorating Tips for the Holidays!

OK, I’ll admit it. I sometimes get a bit stressed out over the holidays…Maybe you do too?

Dining Out "Vegan-Style"

One of the first questions you may ask yourself if you are adopting a vegan, plant-based diet is: “What can I order from the menu at my favorite restaurant?” Good question. Here are a few helpful tips.

Vegan Made Quick and Easy!

Quick and satisfying vegan meals can be easily prepared with your own creativity, along with what you have stocked in your pantry, refrigerator and/or freezer. Some of the best (and most delicious) quick recipes that I have come up with were born from desiring a home cooked meal, not having much time to cook, and deciding to experiment with whatever I had on hand!

Almond "Creamy" Pudding is a fabulous way to serve a scrumptious summer "no-cook" dessert.

Best of all? It prepares in 5 minutes! Click below for the recipe and to read about more quick meal ideas.

Green Tea, Great Music and Summer Desserts

A great show today with Dr. Miki Purnell who shared her wonderful wellness tips and information about top Asian Superfoods!

And of course - my fabulous summer recipe of the week: Peanut Butter Mouse Tartlets - a no-cook dessert that you will love - easy to make too! Click for the recipe!

Family Mealtime

Today, on Jazzy Vegetarian Radio we welcomed the fabulous  Marty Davey NS, RD, LDN, AKA LaDiva Dietitian, to hear about her great ideas and recipes for Plant-Based Cooking with Kids.  (You can listen to the interview here). Thanks Marty!

When I was a young girl one of my favorite first memories was standing on a stool in Grandma Cook’s (yep, that was her real name) kitchen as she prepared applesauce from the apples in her backyard. She would allow me to help by stirring the apples, and I remember being fascinated by the process. I have always loved food and that passion has weaved its’ culinary spell throughout my life and brought me where I am today.

July 4th Vegan Picnic Menu, Jazzy Vegetarian Style!

It is here! Beautiful summer breezes to compliment one of the most festive warm weather holidays-July 4th!

If you are packing a picnic for this holiday, here is a great menu that will not heat up your kitchen AND it is super easy to prepare!

Time to Plant my Herbs!

I was so excited today because it was sunny and warm, so I went to the farm market and bought some fabulous herbs to add to the herb and greens garden I started out on my back deck last last weekend.DECK_GARDEN_BLOG.jpg

Just answer this question: What is your favorite summer produce and what is your preferred way to prepare it, vegan style?

Gorgeous Gazpacho!

During the summer months I love making and serving chilled soups for a jazzy first course, breezy lunch or light supper. Aromatic basil along with ripe, juicy tomatoes are at the height of their season in July and August, making it the ideal time to purchase them from your local farmers’ market to prepare this refreshing soup.

Vegan Summer Picnic

July 4th is almost here! I love to host an vegan holiday gathering this time of year.

Cooking with Broccoli Rabe

If you have not tried broccoli rabe before, here is a simple, delectable and jazzylicious recipe to try. Happy, healthy cooking!

Whole Grain Penne with Broccoli Rabe and Garbanzo Beans

Marinara Sauce, A Pantry Staple

My secret for making quick and easy weeknight recipes is Marinara Sauce.

If you like whipping up home cooked meals in a snap, consider adding a low-fat, vegan marinara sauce as a pantry staple in your kitchen. A good, jarred marinara makes a timesaving base for many plant-based recipes such as lasagna, pastas, chili, sauces, casseroles and more.

Kale and Marinara Sauce with Angel Hair

Eggless Egg Salad

Summer is almost here and it’s time for festive salads and sandwiches. As a child, I always loved egg salad, so I have come up with this fabulous substitute that mimics the taste and texture of my childhood favorite! Great for a summertime picnic!

Jazzy, Snazzy Quinoa

Quinoa (pronounced keen-wa) is a fabulous alternative to brown rice. Quinoa is technically the seed of an herbaceous flowering plant, not a cereal grass (grain), but its texture, flavor, and uses echo those of many true grains, so it’s generally thought of as a grain.

Spring Recipes

My favorite veggie to cook with in spring is...asparagus! Asparagus is one of the first crops of spring. I love asparagus served roasted or lightly steamed and it makes the perfect vegetable side dish for any spring meal!

Mother’s Day Menu…JAZZY STYLE!

Here is my delicious Mother’s Day Menu to prepare and share this weekend! This elegant, four-course meal is filled with great taste and features my crowd-pleasing recipes that’ll impress everyone you are are cooking for this Sunday!

Cooking with Herbs and Spices

Cooking with Herbs and Spices

Cooking with both fresh and dried herbs adds flavor to your recipes, while often adding desirable health properties too. I incorporate fresh or dried herbs and spices daily in my recipes. I sometimes even use herbs and spices when cooking breakfast! Give it a try and you’ll be glad you did. Read More...

Here’s an easy way to incorporate a bit of spice into a quick to prepare, tasty casserole!

Molasses Two-Bean Bake  (Low fat Cooking)

Makes 3 to 4 servings

1 can (15 ounces) black beans, rinsed and drained

1 can (15 ounces) garbanzo beans, rinsed and drained

2 medium sweet onions, chopped

1/4 teaspoon garlic powder

1/2 teaspoon chili powder

1/8 teaspoon cayenne (more or less, to taste)

1 heaping tablespoon blackstrap molasses

1/4 cup organic catsup

 1/4 teaspoon salt

Preheat oven to 375 degrees F. Place all of the ingredients into a large mixing bowl. Toss to combine. Pour into a medium casserole. Cover and bake for 45 minutes to 1 hour.

Serve with crusty bread, quinoa or brown rice on the side. A crisp green salad or steamed green vegetables such as broccoli or asparagus makes a nice side dish for this casserole too!

Tips for Dining Out Vegan Style

The Art of Cooking Artichokes

Artichokes are my focus this week. In his book “150 Healthiest Foods on Earth,” Dr. Jonny Bowden describes artichokes as the “Lobster of the vegetable community.” I’ve gotta say, I agree. I have always loved artichokes since I was a girl. Many people are hesitant to prepare artichokes but I am here today to take away the mystique behind serving this jazzy-licious, super healthy veggie.
