Kale-icious Smoothie Bowl with Orange Cream Swirl

This delightful smoothie bowl features nutritious kale and sweet dark berries, topped with a surprise orange swirl. This tasty combination makes a colorful, refreshing, and healthy breakfast treat.


Kale-icious Smoothie Bowl with Orange Cream Swirl

Makes 2 servings


2 tablespoons flaxseeds

1 large navel orange, peeled, seeded, and chopped

3 to 4 ounces firm or soft, regular tofu, drained

1 cup firmly packed trimmed and chopped kale

1 1/2 frozen bananas

1 cup frozen berries, plus more as desired

1/3 cup nondairy milk

2 teaspoons raw or roasted sunflower seeds


Put the flaxseeds in a high-performance blending appliance and process into fine flour. Transfer the flaxseeds to a small bowl.


Put the chopped orange and tofu in the blender, and process until smooth. Transfer all but about 1/2 cup of the orange/tofu mixture into a small pitcher.


Put the ground flaxseeds back into the high-performance blending appliance. Add the kale, banana, berries, and nondairy milk to the blender. Process until smooth and creamy, adding more frozen berries, if the mixture seems too thin. (Mixture should be quite thick, but smooth and creamy, at the same time).


Pour the berry-banana-kale mixture into two medium-sized serving bowls. Drizzle the orange/tofu mixture over the top and swirl it with a spoon. Garnish each bowl with the sunflower seeds and a few additional berries. Serve immediately.
