Maple-Banana-Oat Bites

Maple-Banana-Oat Bites

Makes 12 Muffins

2 large bananas

¼ cup maple syrup

1 teaspoon vanilla extract

1½ cups rolled oats

2⁄3 cup raw unsweetened shredded dried coconut

2⁄3 cup raisins

Preheat the oven to 350 degrees F. Line two, a twelve-cup standard muffin pan with paper liners.

Put the bananas, maple syrup and vanilla extract in a large bowl and mash into a chunky purée using a potato masher or large fork. Add the oats, coconut and raisins; stir with a large spoon to combine. Mound the mixture into the prepared muffin cups and smooth the tops.

Bake for 30 to 35 minutes, or until slightly golden around the edges. Transfer the pan to a wire rack and let cool 10 to 15 minutes. Remove the muffins. Serve warm, room temperature or chilled. Stored in an airtight container in the refrigerator, these muffins will keep for about 3 days.
